醇脱氢酶是一种锌蛋白，能作用于伯醇、仲醇和[[半缩醛]]等多种[[受質]]。这种酶氧化[[甲醇]]的能力比氧化[[乙醇]]的能力弱，可以利用這個特性解除[[甲醇中毒]]。[[动物]][[细胞]]中的醇脱氢酶还能氧化[[环状化合物]]的[[二级羟基]]，但[[酵母]]的醇脱氢则不具有这种功能。
